That's exactly why I recommended this one to ChefDurp. It's too tall for my tastes as well. I'd be all over it if I liked tall Gyutos.

I have the 210mm Takeda and love it. Sharp OOB and I have gotten it a lot sharper. I have very large hands and it offers plenty of room. The only thing I don't use it for is slicing potatoes, apples etc. - the rustic finish tends to create a big of drag when slicing through deep, dense product - not a problem with onions, carrots, shallots, etc.. I also have the 210mm Sansanoha and enjoy it as well.

I have a 240 Takeda Gyuto and it is a great knife. cuts very well push cutting and chopping. Sharp where its supposed to be and rounded enough on the spine and choil. In my collection Takeda got it just right 4 out of 4 times.

Thanks for the help, really into the SLD now.

The specs say 2.29 a heel...but Steves video says 1.9? Anybody clarify that..

I have the Ultimatum 19c27 and its just a different cutter than I think I like and am looking for a go to gyuto.

I think the takeda is just my baby...my big rustic baby... :D

Chef, I take my own measurements with a digital calipers. I guess it's either a difference in our samples and/or calipers.
