Hi,

I received a Misono Swedish Steel Gyuto for Christmas. I’m extremely happy with the knife and now I’d like to invest in sharpening stones. I have Wusthof knives to maintain as well, but after using a high carbon Japanese-style blade, I am definitely planning on acquiring more of this type.

I’ve read that ceramic stones might be the best way to go for the German knives, but maybe not so much for the high carbon steel blades. What are my options for a stone set and what would you recommend for me and why? Thanks for your time.

Robert

Hi Robert,

Do you mind if I post your question on our forum?

I've done a bunch of videos on sharpening for newbies. You can find them here:

The Shapton Glass Stones are a good set to use. They're easy for beginners:

This 5pc set is the most popular starter set:

Mark,

Thanks for the quick reply. I wasn't aware of your forum - I've done quite a bit of internet research but yours never googled-up. However, I've checked out your videos and I think they're great. Of course you are welcome to post my question on your forum and I'd appreciate a few words regarding advantages/disadvantages of different stones on different types of knife steel, if there are any.

Regards,

Robert
