Looking at getting my first AS petty. Should I wait till the laser is back in stock or jump on the Kohetsu before is sells out. I have the laser 240 in maple and the kohetsu 210. I really like both knives but I"m leaning towards the laset because I prefer the higher blade height. Would really like to see a review or the specs on the kohetsu petty. I think Mark should send one to Mr. Knifefanatic to do a review on.

Joseph if you want the blade height, get the AS Laser.

The Fujiwara Nashiji 135mm would be a killer petty as well, albeit a little shorter than the AS Laser: http://www.chefknivestogo.com/funa.html.

The Yuki and Shimo 120 petty both have height and are really nice also: http://www.chefknivestogo.com/mayupe12.html and http://www.chefknivestogo.com/mashpe12.html.

The Masakage shimo looks like it up their with the other 2 Petty's wiht nice height to the blade also. and a really cool story being the bladesmiths and sharpeners. Both are clad with stainless but with different core steels How different are the core steels on the shimo (White #2) compared tp the Laser (AS)?

The shimo is not a clad knife.

I believe it has some type of Damascus cladding.

Yes, the Shimo is certainly clad. It's got a reactive Damascus cladding over the W #2 core. We've researched this a while back in another topic. Great knives!

Agian I learn something new. Masakage shimo, or wait for the Laser petty. Pros & Cons about the core steels? seems like everyone that touches the Masakages are pretty impressed with the sharpness and thinness behind the edge.
