If you want to match the existing bevel, use a Sharpie marker to paint the edge bevel on both sides. Set your angle on your sharpening system to remove most of the marker, making sure you're hitting the edge of the edge. The angles might not be the same for both sides - it depends on who and how it was sharpened from the company. If that's the case, find a happy medium and cut your own edge bevel.
If you use the EP and have the drill stop collar, definitely use that to compensate for your different stone thicknesses for the best edge.

it say on the site they are at 15 degress so after it got dual (was very sharp from factory) I just set it at 15 and ground until it was a good edge, I found one side was more about 16-17 so i just ground it down.
I use the shapton glass stones, i have the hole line and they sharpen nicely ( i don't have the 32K lol)
