True, I already put my email in for notification as well, was just hoping there was some info on if these have been reordered for awhile, or if they just went out of stock and some kind of ballpark on when they'll be back in. I can wait, just was wondering if it's a knife that might be in within a few weeks, or we're talking a few months?

Ball park means nothing. The Blue #2 core 210mm Artifex were supposed to be in around August, still aren't here yet! Shigs are low production/high demand and there are other dealers that sell them, so it takes a while. CKTG isn't the only customer for these blades usually and there is often a back log to get them. They fly out once they come in stock and they usually only get a handful at a time, so you gotta be quick! I've seen stuff on CKTG sell out very quickly, like 1 or 2 days IIRC.

So I see the Shigefusa is in but now with a maple handle instead of the bubinga. Any chance you can do one with the bubinga handle like the old one, or they're all finished already?

We'll do more in about 6 months when we get a few more from them. Until then I only have 2 shigs left and both have the maple (which is WAY nicer than the bubinga IMHO).

So I've thought about stepping up to a little more expensive knife.

Any of you guys own or use any of the following?

Thoughts on them?

Konosuke HD2
Takeda Classic Bocho


Any other nakiri in that mid $200's range that jumps out at you as a must mention and strong recommendation?

I keep towel towels at my station for knifes folded neatly next to my waste bin.
one wet to wipe off, one dry.

Just a quick wipe on each set down. it's easy to work into a rhythm of your system.

After owning various Nakiri's for a few years, I've learned that I like mid-heavier weights and a height range of 50-54mm.
I like them to be stiff (not easily bent when crushing garlic).

Like Steve noted before, the Fujiyama are ultra nice, but they're at $310.
Fujiyama are thin, but stiff. I own a Gyuto.

The cleaver/chopper I own wasn't bought from CKTG, and was actually labelled as an Usuba...it's fairly thick at the spine, fairly heavy and fairly tall.
Perfect for what I like.

I think a custom Fuji would be the Nakiri for me, or a Taruyasu...because of the extra hardened white.
