 Post subject: Best Bread Knife under $140?

Looking for a bread knife between 9 and 10 1/2 inches for less than $140. Don't care about handle type. Ease of sharpening is a big plus.

I currently have one that cost about $10 with a plastic handle that my wife won't let go because she firmly believes all bread knives are the same and it's stupid to spend more than $10 on one.

Need to prove her wrong.

Looks like Tojiro ITK, MAC and Shun 9 in are all candidates.

I don't think you need to spend that much for a good bread knife. Lots of folks like the Tojiro and Mac--they have a scalloped edge. One nice thing about this design is that it doesn't dig into your cutting board.

I don't think bread knives are very easy to sharpen (but hopefully don't need it all that often). Might involve sandpaper wrapped around the correct size dowel rod.

I have a Mac and really like it.

From a lot of stuff I've read and seen, the Tojiro ITK bread knife Rookie linked to is supposed to be one of the best bread knives ever. I have also heard that the scalloped style serrations are supposed to be fairly easy to sharpen as you can use the corner of a stone to do it. I personally have not done this, but I still love the idea of scalloped serrations that actually cut as opposed to sharp points that tear.

I bought a Tojiro ITK with custom handle. The ITK is great.

These are two knives I had rehandled by Tim Johnson(Taz).
I had the bread knife sent to Taz when I bought it. I bought a set of Maple burl scales for $30(yes they were on sale!) and shipped them to Taz.
He did the work for $60. So I have an ITK w/custom handle for roughly $160 with all shipping included.

Tojiro ITK break knife gets my vote! If the Artifex had the scalloped serrations, it would be my first choice. Less crumbs and doesn't rip stuff apart. The scalloped serrations make the knife more versatile in cutting other foods.
