So im looking for a 150mm Petty and 210mm gyuto

right handed
love carbon steel but im interested in others as well
I use these two knives for about 12 hours a day at work
I do sharpen my knives often(or at least pass them over a 1200 and 5000k grit stones)
looking to only spend about 400-450 on both.

I have some Kikuichi, Richmond, doi, and fujiwara fkh knives now, but as we all know the collection never ends.

I was considering the Hattori fh or a nenox but im really unsure now after posting a previous thread.

give me your suggestions!!

Hi Cody,

Ok, for a 210 gyuto:

Masakagi Koishi 210 (aogami super, good wear resistance so your edge will last)
Taamura Gyuto 210 (R-2 powdered stainless with very good wear resistance)

For a petty:

Moritaka AS (I love their pettys)
Goko (excellent little petty)

There are others of course but these would hit your budget and would be fun for you to own and try.

The original workhorse, The Hiromoto, AS core in stainless clad.
The Kanehiro Wa-Petty, Also AS core in stainless clad.

Would make a great pair.
