 Post subject: Cherry or Walnut for New Cutting Board?

So I'm going to get a good cutting board and want to know some facts plus just your personal opinions on a Cherry or Walnut cutting board.

I know the Cherry is softer, but what else are the pros and cons of each and between them?

Is it mainly and simply just aesthetics besides that?

I've got a big board from David (The Boardsmith), black walnut and love it. Mine is 18x24, good stuff.

Either will make a fine board. Cherry will take on a slightly darker richer color over time. I would pick the one that looks the best in your kitchen/prep area, or the one you thinks looks the best with the knives you have. Both are beautiful in their own way.

To maximize the chances I will notice that I'm about to cut myself, I like to have the maximum contrast possible between the board and my skin color - light skin/dark board or vice versa.

Also, I find it easier to track my fingers with a visually simple board than with a complex, contrasty, patterned board.

The color of my ideal board would be flat black.

Both woods will make a great board. It's more aesthetics and personal preference.
I debated on the big three(throw in Maple) before I decided the lighter color would look best in my kitchen
and went with Maple. Got it from David "The BoardSmith" and love it!

I picked up a Michigan Maple 20 x 15 x 3 1/2 end grain chopping block for under $100.

I fed my new one with mineral oil for three days straight before it finally stopped soaking it in. It sits next to the stove, so for the next few days it would weep a little oil when the wood was warmed by the stove. It would also weep a little if we had the heater on. I took that to mean it was full... lol
