I'm looking for a 210 Gyuto. I'm a profesional and need something a little smaller and lighter for prepping on the line. I have a 240 hammered carbon Tojiro. I like it and was considering the ITK with a handle upgrade. Other possibilities on my mind include the artifex carbon with a handle upgrade, or the kohetsu if it were still in stock. same with the lasers. I'm looking for a wa handle or knife that is capable of getting the upgrade (no bolsters I'm assuming). I know how to sharpen and like carbon steel, cladding or no cladding. I trust richmond and Tojiro but i am open to other brands, naturally.

DZ - The Tojiro ITK steel is pretty reactive compared to some others. It might be an issue in a Pro environment. In my mind, I wouldn't get an Artifex and spend the extra dollars to upgrade the handle. Personally, I'd look to just getting a nicer overall knife (including the handle) in the first place and be done w/it. Not that the Artifex isn't a good knife - it is.

What about the Sakai Takayuki AEB-L Damascus Wa-Gyuto 210: http://www.chefknivestogo.com/satadagy210.html? Nice, easy to sharpen AEB-L at RC 60, all stainless construction, nice grinds, thin, light, nice profile, etc.

The Kohetsu 210 Gyuto would be an excellent choice as well - I think Mark has more arriving soon.

Another nice option is the Tanaka Sekiso Damascus 210 Gyuto - not a laser, but pretty light and a great performer. Fully reactive blade.

The Moritaka Supreme Gyuto's are really nice as well. Thin, light, AS core, nice Yew handles. I have the Santoku 170 w/the new handle and is a super performer.

What's your price range, including a possible handle upgrade?

Not the greatest handle, but certainly functional. Great steel, good medium grind geometry, stainless clad. :)

yea i'm pretty sure im gonna go with the moritaka. That is unless anyone thinks the konosuke white #2 would be a better choice. Those are the two im stuck between.

The Kono is a nicer knife, but their 210 Gyuto in the HD, HH, and W #2 are so darn short at the heel: 42-43mm vs. 46+ for the Moritaka. It depends on your preferences.

I'd have a hard time buying the Moritaka over the Kono, as Steve pointed out it is on the short side if that matters to you.
