Not enough demand, I actually get more requests for a filet knife. Good thing is, though, I got over 30 more of the 230's working as we speak. ;)

HAHA...wow, people actually recommending KIWI knives.
Although the discussion on shape and replicating it on better steels is a good idea, though using actual kiwi knives is a joke, in most kitchens I have worked they get used for spatula's, opening hand towel dispensers, anything but cutting food items.
I was rather shock people actually use these knives.

Well, to test some of the japanese knive shapes, they are pretty useful

Mark, I recently acqire a 52100 Utimatum. However, I still would like a Utimatum white #1. Also, a 270mm option would be nice!
