Tis the season for Mushrooms!!

I managed to get about 100 lbs of chanterelle mushrooms this year. Made a pretty good soup, fried some up with amazing steaks from a local butcher, made a deadly mushroom dip and still have a freezer bin full of sauteed mushrooms.

Anyone have a favorite chanterelle mushroom recipe they would like to share :)

I was hoping to share some pics but couldn't figure out how to attach them at a resolution higher than 400x400.
Anyway, Here is a couple pics of the tasty lil morsels.

Lobster Mushrooms...MMMM So tasty.

I think the lobsters are the best tasting and best textured mushroom i have ever eaten. Absolutely amazing!!

I have never actually spotted a lions mane but have spotted the bears tooth which is supposed to be similar. I have heard they are really good also. I will have to give it a try some time and will definitely keep my eyes out for the lions :)

Bears tooth is lions main...It's Hericium genus. They have different shapes but are all edible much like many Boletes are.

The mushrooms look awesome. Unfortunately i don't get them very often because the wife thinks they taste like dirt and doesn't like the texture.... lol
