This is always a difficult question. Ideally if you want a jig instead of free handing with stones I recommend the edge pro. Most of the little hand held sharpeners are simply not very good.

If hand held is a hard requirement, I have read good things about the Blackie Collins designed Meyerco Sharpen-It. Haven't tried it myself.

Another option might be to get a couple of the Edge Pro half-width mounted stones and just hand hold them and sharpen like Shosui Takeda does by holding the knife on the edge of a table or other work surface and hold the stone at the required angle. Wow. I've never seen the takeda sharpening video before. The analytical side of me wants to find all the faults in that method, but with a reputation like his, what the hell.. haha
Interesting method, I'm scared to attempt it tho

I've actually played with this method in a special situation on a cheap paring knife with a bastard mill file. The cool thing is you can see the Sharpie marker on the edge actually wear away as you make your strokes and you can immediately adjust accordingly to get a pretty good bead on the angle. I could see how one could get pretty good at it with some practice - like anything else :-).

I have actually been thinking about this lately as I have a Kershaw Blur that has a very curved blade that cannot be sharpened on a regular flat stone.

Yes - just using your EP 1x6" stones freehand. If you want two stones on opposite sides of the blank, I can combine them to your requirements.

Straight razor users sometimes even prefer these 1x6" sizes.
