Alright, here are two more that are up for grabs.....actually only one of them is up for grabs. But I will let you all decided. The first one to sell goes and the other stays with me.
The only reason I am selling items is I am no longer in the restaurant business so these knives are just not getting used. As a minimalist I am trying to avoid redundancy in my kit and would rather they go to a good home to get some use.
The top cleaver is a Pierre Rodrigue 210X100 436 grams in O1 tool steel.
The second cleaver is a John Jones 210X100 336 grams in W2.
The Jones cleaver was my main prep machine for a little over a year, great knife but it has some use. In the interest of full disclosure, it also has a cracked ferrule and has a very dark natural patina. The ferrule has been sealed with CA glue and the handle is still very well attached. I purchased the knife for $400.00, selling it now for $225.00.
The Rodrigue cleaver has only been in my hands for a few months, but has seen some great use, there are some scratches on the face, but nothing deep. The handle is birch, mammoth tooth and G10. It also has the start of a great patina. Purchased the knife new for about 650.00, selling it now for 575.00.
