But is Kogatana a wood carving knife....or is it also a vegetable carving capable?

It is more of a wood carving knife. It is carbon steel, so it will discolor with acids in many fruits, but it's a sharp blade that is curved. No reason why you can't used a blade for wood carving for carving fruits. It may not be optimal, but it would work.
