 Post subject: Honesuki Decision

I am looking to buy a new Honesuki.

I am trying to decide between the Fujiwara and the Richmond Artifex. I have never owned a honesuki before. I am a professional cook and I work at a medium sized restaurant. Any recommendations would be great. I was also wondering what the differences were between the two blades.

These two knives, correct?

The obvious difference is in the length. The Artifex is a longer knife.

Other than that:

Artifex has a better steel and the Fujiwara has a bolstered handle. Otherwise, they'll function very similarly.

Between the two, I'd get the Artifex for the steel alone.

do they both have the same blade grind?

Yes the blades are both ground similarly. They're flat on the left side.

I have used the Artifex and did a video comparing the Artifex to the Tojiro DP. I picked the Artifex. It has a little longer blade and it was way sharper OOTB than the Tojiro. Go for the Artifex.
