Susan,
Hi. I'm interested in possibly making another purchase from you—have narrowed down my choices—but have a few questions.

===

For the 240mm Konosuke Wa-Gyuto Fujiyama White #2 steel.

1] Do you have this in stock?

2] Is it a 50/50 edge, with a symmetrical grind?

3] Do you have them with different handle woods?

===

For the 240 Masamoto KS Gyuto.

1] Would you happen to have this with a left-handed D-handle? ...long shot, but thought I'd ask.

===

What's your opinion on those two choices?

I know it's a lot of questions, but this will be my first wa-handle knife and I'm looking for something special.

Best,
Darren

1] Do you have this in stock? Yes, all items that are out of stock will say "Out of stock".

2] Is it a 50/50 edge, with a symmetrical grind? Yes, all Konosuke gyutos are 50/50. No exceptions.

3] Do you have them with different handle woods? No only those listed. We can do custom handles and they range from around $90-$175.

1] Would you happen to have this with a left-handed D-handle? ...long shot, but thought I'd ask. - Yes we can knock the handle off and install it flipped over to the left. It costs $30 if we're able to use the same handle and $50 if it cracks and we have to install a new one.

For my opinion on both knives I like the Konosuke better. It's a great knife.

Both are great cutters.
The Konosuke is a true laser, will be thinner, more nimble.
The Masamoto KS has a great profile and is more of a middle weight knife. It is 20mm+ longer on the edge, my Kono is 232mm and my KS is 255mm.
I have both(though my Kono is HD) and love both, both have their place.
