The 8 piece vs. the 5 piece difference is basically the stone holder/diamond flattening plate, which is $50 separately, hence the $139 vs. $189 price difference. If you're just starting out, a stone holder and flattening plate are pretty nice to have. A lot of people like the 3 stones in this set.

Another popular option is this: http://www.chefknivestogo.com/4pcshstset.html

Purchase the stone holder/plate separately: http://www.chefknivestogo.com/xxcdiplandun.html
or
spend $10 more and get some strops as well with this set: http://www.chefknivestogo.com/stsetwiunhob.html

Mark doesn't sell any bad stones - it just depends on what kind of stones you want to choose to begin your sharpening journey.

The stone's in the 8 piece set:

500 Beston
1200 Bester
Suehiro Rika

Are three stone's I've used for years and still really enjoy.

Do I prefer other stone's over these today....yes for the first two in the list. But, if you buy this set and don't become a sharpening nut....chances are you'll really like them. When you've used 15 difference 1k stones....you develop opinions. Opinions aren't always helpful....or cheap. :)

For the record...my current lineup is:

400 Latte
1000 Ume
Rika
10k Naniwa SS
