What kind of cheese?

I have three variations I make on a regular basis
cheddar / American
Gruyere
and Gouda / goat's cheese

I'll often use a blend of cheeses. We like good cheese so I will often have stuff on hand, at the very least I'll spring for some good sharp cheddar. I am going to make some today in fact and it will have some New Zealand aged white cheddar, provolone, swiss, and I have some Tillamook black label to fill out the cheese load in. ;)
