I feel I've gathered some nice knives over the last couple months. A masakage yuki 120 petty, a tojiro 155 deba, and a Richmond 240 AS laser. What should in look into getting next a sujihiki? Another gyuto that's not a laser? Honesuki? I'm basically asking for an excuse to buy another knife :)

Sujihiki if you slice a lot of meats, Honesuki if you debone/break down chickens frequently, bread knife (works for other stuff besides bread like peeling watermelon or pineapples). Nakiri's are nice if you do a lot of veggie prep; they are shorter/lighter than gyuto's and may tire you out less. When I did my potato cutting video's, I noticed how much faster I was with the Funayuki and Nakiri's compared to the gyuto and how tired I was after the gyuto video vs the others. The AS Laser is a great knife, but thicker than most other lasers. Maybe look at a Kono HD, Kohetsu AS, Sakai Yasuke, etc for a true laser. A funayuki is also a fun knife for the smaller prep duties, Murata or Yamashin both work well.

Guessing you want a Wa handle, OK with carbon?

Also, hows your sharpening setup? Any holes you need to fill in there? I can always help someone spend their money!! :D

Of the three knives you mentioned, the sujihiki gets the most use in my kitchen. Next is the honesuke and last is a robust gyuto.

If you want something less expensive and very versatile try the Tojiro ITK Bread knife. I use that thing on lots of stuff.

i have a bread knife already that i'm happy with. i've found out i want to stick to mostly stainless or atleast san mai. i have a yamashin santoku i use at home a lot and i'm not quite disciplined enough to handle full carbon knives. i'm having no trouble with clad tho like my AS Laser. I thought about trying a nakiri but gyuto seems to cover all of that and the Laser is so light i've never noticed getting tired. My sharpening set up in a combo stone 800/6000 i believe. i haven't had to sharpen my laser yet and it seems like it'll last for quite awhile. i got a 120 petty and didn't realize how big 120 is. what size petter would be more similar to the size of a western petty like a 75mm?

It sounds like you need to consider a paring knife.

I have a messermeister paring knife that's why I ask id like a nicer version maybe a 75 or 95mm petty?
