While I certainly agree with Rookie's statement: IF I had only one stone to use it would a 1K.
1,000 grit is the best grit for being able to remove metal while still making an edge that is refined enough not to grab your food too much. I find that anything below 1k has a lot more friction while slicing and in some cases will grab your food pretty bad.
