I agree with Tim above. Thin + Hard gives you edges that will slice and cut most foods but they are not meant for rough work. Bones and frozen foods are rough work.

Think of it like buying a sports car and taking it off road. It's a bad match. Get a jeep for off road stuff (i.e. F Dick, Wusthof or something soft and similar)

Yup. Tim and Mark are dead on about the frozen foods. I cringed when I read your question. :) You'll love the tall Kono Gyuto. If the AEB-L parer isn't in stock at the time you are ready to order, get the 12c27 version I linked you.

In that case for the bread knife take a look at the Artifex or Mac instead?

Isn't this fun? ;)

If I do ever need to cut frozen foods or such, i'll just use my old but freshly edges pro knives ;)
