Hi Mark,

The order so far has some items out of stock but it looks like this: will have to consult with my father but will be getting some of the essential things for him

1x edge pro full monty http://store.yahoo.com/chefknivestogo/edprocufumo.html

1x edge pro essential http://www.chefknivestogo.com/edproesset.html

1x shapton GS 320 http://www.chefknivestogo.com/shglst320grf.html

2x shapton glass stones 2k http://www.chefknivestogo.com/shglst2kedpr.html

1x Shapton GS 16k http://store.yahoo.com/chefknivestogo/shglst16kfor.html

2x atoma 140x http://store.yahoo.com/chefknivestogo/at14dipl.html

2x atoma for edge pro http://store.yahoo.com/chefknivestogo/atoma1403.html

1x 1 micron diamond spray 2oz http://store.yahoo.com/chefknivestogo/1midisp10cah.html

2x nano cloth 5pc stropping set with stone holder "out of order" http://www.chefknivestogo.com/nacl5pcstset.html

Still deciding on knives but was thinking of something like this

http://www.chefknivestogo.com/shunpremier5.html but was reading reviews that the tips chip off.

If there is no more sets like above, can you maybe make one up of some knives you recommend in a holding block?

budget for knives is around $800
japanese style
right and left hand users
nice strong blades

Kind regards,

Eric

Hi Eric,

The 2K glass stones should be here in about 2 weeks. I don't think they're worth holding up your order.

For the strop set I think you could get this one and be very happy with it. Just add a bottle of diamond spray. : http://www.chefknivestogo.com/stsetwiunhob.html

Here are a few to look at that will be really fun to sharpen. I picked a few different sizes but so can you. There are videos on most of these so take a look at them:

Goko: http://www.chefknivestogo.com/gokogyuto240mm.html
Kanehiro: http://www.chefknivestogo.com/kagigy24.html
Kohetsu: http://www.chefknivestogo.com/rikoaosu21gy.html
Masakage Yuki: http://www.chefknivestogo.com/mayugy24.html
Takeda: http://www.chefknivestogo.com/tagyas24.html

You said "nice strong blades" and I usually pick something thick and soft like a German knife for a beater. The above are more performance type knives.

For a good beater try this F Dick: http://www.chefknivestogo.com/chefknife.html

I'm going to assume the double up's are for two different sets? One for you...one for dad?!?!

Any who.....

As to a set of knives with an $800 budget......you'll get several different recommendations.

Mine:

http://www.chefknivestogo.com/ic24gy.html

Supposed to be in stock Monday.....incredible knife

http://www.chefknivestogo.com/kepakn31.html

Technically a right handed parer due to the "D" shaped handle....but should be easy enough for a lefty to accomodate.

http://www.chefknivestogo.com/rila27suae.html

Awesome suji

http://www.chefknivestogo.com/riarbrkn27.html

Bread knife

http://www.chefknivestogo.com/fujiwara4.html

Awesome petty. Carbon core, stainless clad.

That would be a very nice set up. :)

Ok, these are what I have so far;

Bread http://www.chefknivestogo.com/riarbrkn27.html

Paring http://www.chefknivestogo.com/kepakn31.html

I think this Sujihiki will make a great sashimi knife http://www.chefknivestogo.com/rila27suae.html

Petty http://www.chefknivestogo.com/fujiwara4.html

Gyuto; will this one be coming in stock soon? http://www.chefknivestogo.com/koadhd24wa.html I like the shape of the blade and the thinness.

This knife here http://www.chefknivestogo.com/mayugy24.html would be my number one pick, but the blade is more suited to push cutting where I will have a Nakiri for this job, love the design though.

I may even get a Nakiri's, I like them in this order;

http://www.chefknivestogo.com/tskakuna16.html
http://www.chefknivestogo.com/kohdna18.html
http://www.chefknivestogo.com/rihablstna16.html
http://www.chefknivestogo.com/mu16na.html

Do you know when the top two are back in stock?

ok this nakiri http://www.chefknivestogo.com/moritaka1.html

and this gyuto http://www.chefknivestogo.com/mayugy24.html to finish off my selection, I've picked a variety of steels to have fun sharpening with and playing around in the kitchen...

http://www.chefknivestogo.com/nacl5pcstset.html will be arriving shortly :) Nothing else will bring your edges up to a comparable level of sharpness.

We don't like to ship the blocks outside the USA. They add a lot of money to shipping and they get beat up. Otherwise the stuff you picked is all good.
