Hi Mark! I am going to purchase a Moritaka Aogami #2 Gyuoto 210mm, but also interested in getting a sharpening stone along with it. What would you recommend please.
This will be my first purchase and looking forward to it. Would you please include a little explanation about this knife! Would you recommend it!! Or is there something else you might bring to my attention. Highly appreciate your input.

Hi Elie,

Moritaka aogamis are easy to sharpen so a wide variety of stones will work well for this knife. Are you a first time sharpener? If you could elaborate on your experience and use habits I could give you a more specific recommendation. However, something like the Shapton Glass stone starter set would work for you. They super easy to use, splash and go and come dead flat right out of the box. They also are nice and hard so they won't gauge on you. Try this small set. As far as the knife is concerned I think they're really fun knives to use and own. Some like the aogami super (supreme series) better but the aogami #2s are a little less chippy and a little easier to sharpen. Moritaka is a family run blacksmith shop and they make cool knives and have a history that goes back hundreds of years.

Hi Mark,
I actually checked out the featured product "Kohetsu Aogami Super 210mm Gyuto" on the CKTG website and I really liked the video you've posted!
I'm thinking of getting this knive instead, I did like the Aogami super and stainless steel cladding idea, it makes for easier maintenance.
Do you still think the "Shapton 6pc starter set" would go fine with it!!

The Shapton set will work fine with anything you can throw at them.
