The Nakiri is ground 50/50, and sharpened both sides.

Also, if that's a loaner I would recommend you send it to Shaun and Aaron. I'm sure they would do a quicky video for you and give you their opinions.

If I remember, it is around 54 mm at the heel.

Its a test piece Mark, so I'm sure if they would like to test it, it could find its way to them.

Pierre,

The "new" carbon that you mentioned on the knife that Salty is using................secret? Looks like it's working from here................

I would be honored to test a piece by you Pierre. Aaron will surely test it if I do, and vice versa, as we send knives back and forth regularly. Let's see if Salty will send it to Aaron first. Be careful, because either one of us may try to buy it off of you. ;) Thank you for the opportunity.

Any time gentlemen! And thanks for the responses! It is nice to hear (or read :) ) I'll chat with Salty, I want to give him time to beat it up a bit. lol!

The new carbon isn't a secret as such, but I don't think it has been in the kitchen much if at all. So once I get some feedback, and am comfortable adding it to my lineup, I will say what it is (maybe :D )
