 Post subject: Gyuto blade height preferences

Hello all,

I have been thinking of getting a higher price range taller gyuto for a while, but have read enough comments from posters I respect voicing their distaste for a tall gyuto that it has given me second thoughts. Is this just a feel thing, or are there more specific reasons for the preference? Does the taller blade limit the versatility of the knife through certain ingredients? Does it create drag, or is it simply that the blade is heavier and less nimble?

I have two gyutos, one taller and one shorter, and for reasons I cannot really articulate I tend to prefer the taller one. It really is just a feel thing, as the shorter one is a significantly better knife that performs brilliantly, but the tall one just feels better in my hand and on the board, and thus, I reach for it more often.

No, it's just a feel thing.

I'm just a home cook, so I don't use my knives for hours at a crack. I think this is the reason I don't have a strong preference. I own, and use, both narrow and wide gyuto's.

For some things, like slicing down cabbage, I prefer a taller gyuto, like my Addict 2 or AS Laser. Other things I prefer a narrower gyuto (artifex 240mm KS style, wa handle) where I want a more nimble feel.

I like em tall. Something about a tall knife that appeals to me. I think it's because I like to chop.

All depends on what I'm cutting. I use them long, tall, short and everywhere in between. That's why I have several and looking for the next.
