First off let me say I'm a new sharpener with minimal experience. I would also like to say thank you to everybody for all their help so far. That being said I blame u all for my new found burning desire to try new knives, thanks ao lot :)
I already have a 240mm Mac Pro, 240mm wa artifex and 8 in victorinox. I'm practicing sharpening on the artifex and the victorinox. I'm finding myself really enjoying the wa handle and would like to pick up a wa petty. My wife will use this also so 150mm is probably about the limit. We are both right handed and I would like to sharpen myself so I'm not looking for a steel that is too difficult. I'm also not against carbon as long as its not too reactive. I'm trying to get my wife better with her knife care but its definitely not perfect at this point. We are both home cooks. I've narrowed it down to the following choices. Any insight would be appreciated

1. Masakage shimo
2. Moritaka as
3. Sakai Takayuki Damascus

YW, we love spending other people's money....and we don't feel bad about it either. :o

Not the Moritaka AS if you're unsure about carbon....pretty reactive cladding.

I would probably say the same thing about the Shimo....but I've not tested it's cladding for how reactive it is. However, most carbon damascus cladding are fairly reactive at minimum.

Based on that "qualification" of yours, I'd say the Takayuki Damascus of those three.

However, in that price range, I'd take the Fujiwara Nashiji over the other's:

It's stainless clad carbon and the blades are amazing. Not that the others aren't great blades too....but in my humble opinion, these are just that much better.

I like the looks of it and has the handle I want. How about the hardness? Will this make sharpening difficult? What about upkeep, I have a Mac black ceramic hone? Is the edge more likely to chip at that hardness?

Sharpening will probably be easier at that hardness.

It would be more likely to chip from a pure hardness standpoint....I can say that's ever been a problem for me, but YMMV.

The Fujiwara Nashiji petty looks to be a relative bargain in that line (the 240 gyuto is over $500!)

Nice selection . . . if you want to break your wife of the knife care issue, let one get a little rust on it and show it to her. As long as it doesn't rust too long some bar keepers friend will take it right off and your wife will see the results of her carelessness . . .
