Thanks for all the great feedback guys! Just pulled the trigger on a Konosuke Fujiwara Blue #2 Funayuki/Gyuto 240mm! We will see how it goes!!

I just received my new knife and I am completely speechless!!!! Absolutely a thing of beauty! It feels and looks awesome! I cannot wait to try it out tonight . . . veggies beware, my new Konosuke in the HOUSE!

Okay, so I now have some knives for sale :). Seriously, I just killed a tomato and onion and now I truly understand the term "dropping through food". Words cannot describe how impressed I am by this knife, who knew?!?

My concern regarding the san-mai construction is no concern at all (the knife I compared it to was numb compared to this knife). The only thing I am second guessing is that it is not a 270mm, but who cares?!? I am on a high right now!
