 Post subject: Konosuke or Takeda Sasanoha

I am about to pull the trigger on a new high end Gyuto for my home and I am trying to decide between the Konosuke 270mm funayuki/gyuto or a Takeda 240mm sasanoha. I am a cook and work with some decent japanese knives at work so I have respect for knives and know how to treat high hardness steel. I have never owned a true laser and I am not sure if the Takeda is one or not but I have always been interested in the Takedas because of the steel and the finish, now I also love the look and shape of the Konosuke as well. Which would you buy, I would also like to add that I am purchasing a Moritaka supreme 165mm petty in aogami with a korouchi finish which makes the Takeda a bit redundant. Finally, does what I believe to be a lacquer kurouchi finish like on the Moritaka make the blade feel muted and also does the Takeda blade feel muted with what I perceive to be a bake on kurouchi finish. Which would you buy as I am geting anxious over here.

Kono, maybe even the HD? I did a saya for the Takeda and while it is very thin, it was also very flexy and sort of a PITA to sharpen. The Kono HD's have a much more solid feel to them. I like the grinds on the Kono's vs the Takeda grind.

JW <> Kurouchi IS a baked on finish... mud from the annealing. A lacquer is sometimes applied on top afterward.

I don't know that I'd say the kurouchi causes any muted feedback; the iron-cladding on both the Moritaka/Takeda do - IF you consider them muted. Furthermore, if you still believe the kurouchi is muting, get some sandpaper & polish it off. Problem solved.

I would buy the HD (the only two Kono 270 funayukis) regardless... because its HD. Really my only decision would be the 275mm @$337 or the 285mm @$310...

You did mention it; there are only two Kono 270 Funayukis. There aren't any other 270 Funas by Konosuke...

I have the HD Ultimatum and like it :) Need to use it more though...but it has to compete with my Tanaka, AS Laser and now a Blue #2 Honyaki!

The Regular HD2 270mm Funayuki is $337 and the Richmond HD Ultimatum by Konosuke is the 285mm blade one, but it's a slightly different profile. The Fujiyama Blue #2 series also has a 270mm Funy as well :)
