 Post subject: Which Knife is best for my Situation.

I think I have narrowed it down to 3 knives and I want to know which would work best for me. I am going to be sailing across the Atlantic in a small sailboat. There is not enough room to take a kitchen full of equipment, so I need to taper it down to just the essentials. I would like to limit my knives to 2, a boning knife and an all purpose knife. I need to keep the cost down in case a knife should end up overboard. I believe the Richmond Artifex Honesuki 165mm AEB-L blade (69.95), would be a good choice for the boning knife but I have narrowed it down to 3 choices for the all purpose knife. The Richmond Artifex Santoku 190mm (69.95) (seems a little long for working in a cramped galley of a small boat), the Tojiro DP Santoku 170mm VG-10 blade (69.95), or the Tojiro Stainless Wa Santoku 170mm.
Which would work best in a salt water environment? I am right handed, prefer the Japanese handle though I can live with the other handle. These will be my first sharp food preparation knives and I intend to keep them that way. I hope this is enough info, I am looking forward to any recommendations.

If you like a wa handle go for the tojiro stainless santoku. They're nice and light and fully stainless. It will work well for you.

Of those three, they would all perform similarly in a salt water environment.....but have you thought about a ceramic knife?

This might be the one case where I'd recommend one actually.

The ceramic wouldn't need to be sharpened, which would also be a plus, but they are a bit more fragile! On a rocking boat, I would be concerned that it would slide off and snap when it hits the deck.

Boats still rock even when it's not a Hurricane!! LOL. I was on a 26' boat in 4-5 footers inshore, it was hard to keep a good footing to fish! Out in the bigger ocean, there will be bigger waves and swells, too!

Thanks for the help. The ceramic although being immune to corrosion is a bit to fragile when working on a moving boat, I've already chipped one in the kitchen. So I've decided to go with te Richmond Artifex Honesuki 165 and the Tojiro Stainless Wa- Santoku 170mm for my galley knives.
