Any thoughts between these 3?

If it were me I'd go with the Artifex Nathan. I see to many torn up VG-10 knives. The others are real good deals though. Tough choice for sure.

You might want to consider a Idahone ceramic steel also. Very handy.

I think the Artifex wins. Gonna wait a few weeks and see if Mark gets any of the knife guards in so I can order a handful of those at the same time. Thanks y'all.

I think you made a good choice man. I have used this particular knife a lot recently at work and it has held up great. It is sharp OOTB and holds the edge pretty well, can't comment on sharpening as I have been lazy and haven't gotten around to it. Only complaint I have is it a bit thick behind the edge which is not something many at home cooks would even notice other than minimally in the performance department after the blade became dull, other than that it is a tough little sucker that I break out whenever I am real busy and need to be able to toss my knife around a bit and do a lot of quick dicing for hot sauces.
