I am also intrigued by this Itto-Ryu Hammered knife but can't find much info on it. I am looking for a good little line knife with a tsuchime finish but wasnt sure of the metal used, if it was hand forged or reshaped tool steel, etc.

Again any input you have on this knife or a better substitute would be great.

Oh by the way the moritaka santoku my prep guy got on the last order was outstanding and he loves it. Then my line girl ordered a gyuto from the same line and loves it as well. So needless to say I have all my staff excited and chomping at the bit for me to place another order with you.

"Better substitute" is a really difficult comment to reply to with very little background.

I could say a lower price point blade like the Yamashin in White#1 or Tanaka in Blue#2 would be a great house knife, but I don't know much about your staff or the demands on the knife. It's probably going to take some abuse at some point so I'm not sure you want an expensive knife. I can see these either of these workhorses filling a house knife capacity admirably... if carbons are a house knife option.

I've not seen the knife in question, so like Melampus, I haven't replied.

However, I have seen a knife made by the same people and it was well made. Whether that translates to this one or not, I'm not certain.

It "LOOKS" an awful lot like a Kumagoro which is a good knife. It's not uncommon to have several different brand names on the exact same knife made by the exact same people.....so it's possible this is a Kumagoro clone. If it is, it's a good knife that could use a thinning.

The Yoshikane Mel linked to is a good knife as well, but again it needs a thinning to be a great knife. Once it's been thinned (it took me hours, but that was before I had a belt grinder) it's an amazing knife that I often regret selling. The steel is very nice.

So as far as I can tell Itto Ryu is a general contractor brand that does work with a number of different blacksmiths just like the Sakai guys do. When I was with Mr. Tomita who makes the cool clad knives he checked out the black coated knife with me and it was not his. There was some discussion about how they did the finish in Japanese so I didn't under stand a word of it. So, I believe the three different knives you see on our site are actually 3 different small blacksmiths. The hammered ones are made with white #2 steel and very cool looking. Shaun is going to do a video on them soon and I'll have them sent over to Adam after Shaun is done with them so he can enter them into his database (brain).
