I think the Artifex line blows Victorinox out of the water...and I'm a fan of Victorinox.

Artifex is better in a couple of ways, and worth the extra money. But I'm interested in reading why you think so. Other than the differences between AEB-L and X50CrMoV15 and the differences between the Artifex's French chef's profile vs the Forschner's German, how would you say the Artifex is better?

I would love to see the 240mm artifex with a wa handle and ground by Lamson to a much thinner edge before sharpening. Edges are around .020", I would like to see half that at least to .007-.010" max. I converted 3 240mm Artifex with the ks profile to wa handles and thinned and they just rocked, really perform nicely. I have been to Lamson and have seen edges ground this thin or thinner so I know they can do it!

Mark, can they do solid AEB-L at 61 rockwell, or a good solid carbon steel?? Or clad AEB-L or carbon??
