So, the superstones are a little softer than many others we sell. Soft stones tend to cut fast (grind quickly) and wear quickly too. In the higher grits they tend to polish well and they also tend to gouge if you wobble or use to much pressure.
So, I usually recommend the 5k-12k superstones and I tend to not recommend the lower ones. I also recommend you strop on the high grit stones to refine the edge. Another way to say this is to use edge trailing strokes. This will allow you to refine your edge without gouging it.
If you want a good 1K stone this one is really good and similar price: http://www.chefknivestogo.com/ri10grst.html
The superstones are splash and go. This Imanishi stone needs a soak of about 10 minutes.
