Paul, if you are new to sharpening I would highly recommend using a synthetic stone/combo stone. Naturals are a completely different beast and would probably just frustrate you and that is NOT what you want when learning to sharpen.

Mark's stone suggestions are good ones. These guys know their stuff.

Paul - welcome aboard. You're actually talking to some of the most knowledgeable knife sharpeners on the planet - I'm just not one of them :-).

Hi, being a lover of natural stones the problem is every one is different and usually used by seasoned sharpeners. The synthetics are labeled with the grit ratio and with that you know what you getting. J- Nats vary in grits from stone to stone and even though I love mine they are a littler slower and require a little more fineness and knowledge of the amount of swarf is coming off. Just my two cents worth and I own at least 10 Japanese naturals not including my set of Arkansas's that don't work well with the harder Japanese knifes at all. Peace, jmbullman. Moderator
