Hi guys,

I was led to believe this is the best bang for your buck under $150 and i'm looking at buying it... I've seen a youtube video where you recommend the 210mm. is this still the case?

my second question if you could please entertain it, I'm looking for a good pairing knife with the same characteristics (best bang for the buck) to pair with the quality of the fujiwara. could you recommend one?

There are 3 brands that I tend to recommend quite a bit for lower priced stainless.

Fujiwara FKM
Tojiro DP
Richmond Artifex

These are all good knives and sub $100 for a 240mm Gyuto.

The Fujiwara FKM is a great budget knife for sure.

210mm or 240mm would be a personal choice really. I prefer 240mm if I had just one, but I do use both sizes frequently in my home kitchen.

Fujiwara doesn't make a great, true paring knife.

I really like my Shun Classic paring knife for it's handle shape:

But, it's not exactly a low cost paring knife.

Tojiro makes a parer:

Never used either, so can't recommend specifically...but the rest of the knives in both lines are nice.

Another option I do like, but it dives into the world of carbon steel, is the Dojo parer:

This knife is stainless clad carbon core...so it's care isn't as needy as a full carbon blade.

I have one of these I put my own handle on and it's a really nice parer as well.

Fujiwara FKM is one of few best, sub $100, 240mm stainless, western handled gyutos. But it's no better than the Richmond Artifex or Tojiro DP -- just different. I'd say the Artfex is the better knife for its better alloy, but -- y'know, priorities -- the FKM's cosmetics are a lot better and the DP's stiffer.

And, nice as it is for an entry-level knife it's only entry-level and is by no means the best knife or best value under $150. The claim betrays an unfamiliarity with the alternatives. For instance, the Suisun Inox Western is a much, much nicer version of the same thing, $135. Kagayaki CarboNext is an outstanding piece of metal for $130 -- and there are others.

Don't get me wrong, I'm not say "don't buy it," just providing some perspective.

The Fuji FKM 240 Guyoto was the first knife I bought from Mark, and I have never regretted it. I wanted to get a sub $100 knife so that I could try out a 240, and just get a feel for Guyotos in general. I previously owned Misono and Tojiro Pettys and Santoukos but never a Guyoto. I picked the Fuji over the Tojiro just to try a different brand (Richmond knives weren't around yet). I was VERY pleased with the knife. It was light, felt good in the hand, easy to sharpen, and opened my eyes to why a 240 was the way to go in my kitchen. I still use the knife a lot, even though Ive added a few others, including a Kono HD. I think it was about $80 at the time I bought it, and for me, that was the perfect price-point to evaluate if I was going to go forward and seriously persue more Japanese guyotos.
