Actually given the TREMENDOUS amount of sharpening you do, I have a feeling you will be wearing through every last one of them :) Some overlap, but significant differences. Looking forward to hearing your opinions regarding the 800 :)

Should be a good progression that's quick and gives a great edge , but wont be too fine. Lots of stone options within that range too , your probably gonna wanna try and go with the harder stones going off of what your saying your doing. (ie hundreds of knives weekly) keep them true longer and last longer. (seriously dude you already burned through a 1k?!?!) Honestly I would call ken , he has LOTS of options in the 1k range (5 in the bamboo and 4 in the ume according to the spreadsheet I have) and he can definitely point you in the right direction.

But what do I know.

That's kinda my thought to the progression, the 2k bamboo though is reserved for sharpening single bevels. I don't consider it a stone for sharpening double bevel knives, its abilities are kinda wasted when doing so.

I love my Aoto stones so between the bamboo 1200, Naniwa green brick, and my Monzen I have a few bases covered in respects to finishing. The 2k Ume is on my radar too :D

Me and Ken talk regularly about stones and sharp stuff.
