 Post subject: I want a Nakiri. Which one?

Mark,
I'm looking to purchase my first Japanese knife, and I love the style and
look of the Nakiri. The knife will be used for home cooking only, and will
be stored on a magnetic rail fastened to my backsplash. I have read up on
Japanese steels and have decided that a white #1 or #2 should be just fine.
I'm currently stuck between two knives on your website. TheTojiro Shirogami
Nakiri 165mm (F-699), and the Yamashin White #1 Nakiri 165mm (YS-NA165W).
Which one would you recommend for overall looks, performance and quality?

I have both. The Tanaka KU outperforms both easily and the Tanaka Sekiso is even nicer, as is the Richmond AS Laser. The Yamashin is a bit chunky in the main grind and sort of lefty bias in the grind. The Tojiro is a little thinner, but still somewhat beefy overall.

Andy - if you intend on using this nakiri for the years ahead as a long-time resident in your magnetic rail or knife block, think long and hard about moving up a few notches in performance over the low end nakiri's that you are considering. The Tanaka Sekiso Damascus nikiri is a great knife with better blade geometry and performance. Just ask Tim :-). A bit larger investment up front will pay dividends every time you use this knife.

Just something to ponder before purchasing...

Of the two, the Tojiro is better, but as others have said stepping up a few bucks would gain you a lot.

Muratas knives are fantastic, and although I've not seen this particular knife, it's sure to be better made.

Good info Adam! I haven't gotten a Murata yet (eyeing the Funayuki though!). We need to get Mark to start posting Choil Shots of some of these knives :)

Yeah, the Sekiso Damascus is very thin behind the edge and performs very well. I have a video of it in the video section, along with an Artifex Nakiri and the Richmond AS Laser Nakiri. I prefer a taller Nakiri with the rounded tip personally, so that is what I usually look for now. The Artifex feels a bit short heightwise for me and the Sekiso is just tall enough.

I am been hooked on Nakiri's for a while and starting to feel the same way about the Funayuki's now, too :)

I ordered one immediately on reading Mark's comments since I figured all of you funayuki collectors would snatch them up before I could even think about it!

For not much more the Tojiro Damascus DP Nakiri 165mm is great. My wife preferred it to the Watanbe blue #2, which is twice the price. It's her go-to knife.

I've had a couple Nakiri's for last 2 years. When i get another one, it'll be Aogami/Stainless clad...50+ mm in height.

Probably 180mm in length.
