 Post subject: Need knife recommendation

So I'm looking for a new knife. I know I want to branch out and get a carbon steel. I love the ease of sharpening even though its a daily thing. I enjoy the look of the petina, and I have heard great things about carbon knives from all my fellows. I'm right handed, I'm thinking I want to get a slicer for my first carbon knife, but am open to gyuto and chef knives as well. I'm running all Japanese knives but doesn't mean i'm not open to others. I know how to sharpen and have a basic 2 sided whetstone (would love a recommendation on a new stone as well!) I'd say my budget for the knife is around $100/150 for slicer or $200 for a chef knife. Also if its a chef knife 240mm is my limit. I've used 270mm and they are just too big for me!

Tanaka Sekiso 240mm gyuto. One of my favorite knives, incredible cutter, awesome grinds, etc.

Another good one is the Richmond Laser AS; it's carbon core, clad in stainless, but also performs really well.

I had a gyuto in this series, very nice!

Do you want a Wa handle or Western handle and what length suji?

New stone, Bester 1200 or Nubatama 1K Ume Medium, and something in a 3-5K grit range, Rika 5K or something like that maybe?

Richmond 52100 Ultimatum is a fantastically good knife, which for some reason doesn't get a lot of recommending around here.

I'm a picky guy, and admit to finding it disappointing when it first arrived. There was a minor cosmetic issue (tool marks on the right face, which could have been interpreted as but were not an overgrind), and it felt heavy and out of balance when first using it. Honestly, I wrestled with the idea of returning it.

Love happened. Now I reach for it as or more often than for my Konosuke.

The right face is quite convexed which would probably be good for a right handed user, but how would I know? If you've ever used a carbon Sabatier, you have a very good idea of what to expect once you get the knife in motion. The Ultimatum feels like a Sabatier on the board, but takes a better and significantly more long lasting edge, which needs very little steeling to maintain. The knife is more robust than its middle-weight 7oz would have you believe. Short of hacking through bones, the knife is truly a do it all.

Love is the right word.
