Hope this isn't innapropriate BUT does anyone hae any experience or opinions about the Miyabi Morimoto 600MC line of knives? They have been discontinued,I think,and some places are offering them at some discount but the prices ar still pretty steep. Are you paying some for the knife and more for the Morimoto name or are they a good buy?

I haven't heard any complaints about these personally, and I've handled a few of them, the are pretty nice. If you like it you should go for it IMO.

The ad at Cutleryandmore said they were hardened to Rc 63 which sounded good. Thanks for the vote of confidence. Even marked down the one I'm looking at is $250 which is a big bite of the apple for me.

They're good knives. We never had complaints when we sold them. Unfortunately we can't get anymore of them.

I think they have been discontinued. Maybe they were a little too pricey for the average person. I'll watch for a while. Maybe the price will go down ssome more. The 10" Chef is still $330. The 9"Slicer is a lot less,though so I may go for it.

bought a 240mm 7000mc from culteryandmore before. the fit and finish was amazing on both handle and blade. But:
the blade was twisted and bent as the blade continues to move after heat treatment.
very handle heavy.

I have a Miyabi 240 that is not the Morimoto. I think the ff are very good, the only reason that I'm writing is that I too have noticed an ever so slight torque in the blade. If I didn't do my own sharpening I probably wouldn't have noticed and it has not affected the performance. If you have your eye on this one specifically go for it, I'm sure you'll love it, I really have enjoyed mine.

Thanks. Sounds like they may be worth the money. I have afew things on my plate keeping me from getting one now. Hope thay are available at least for a little while.
