Hi Guys,

Has anyone tried these?

I love the little Victorinox 3" paring knife for its light weight and compact size. Problem is, it goes dull every five minutes. Am looking for something similar with better steel. Am thinking the Dojo might be the answer.

Any opinions?

Blue steel clad in SS. I have a 4" Dojo and the 135mm Dojo as well. Good edge holding. Another option is the Artifex 80mm paring knife.

The Dojo parer....ahhh, fond memories of a group buy to get that elusive little bastard from a German retailer and then right after I finish with all the fun of that Mark from CKTG comes along and says...."Well, why didn't you let me know, I can get those EASY!!". Grrrr............. :)

I love the blade, but the handle isn't near as comfortable for me as the Shun Classic which has my favorite OEM handle amongst parers. I switched the handle out on mine and it's one of two production parers I still love. The steel is great for paring knife use, and the blade is reasonably thin. I thinned mine a touch though.

What is the other one?

I agree that the Shun parer has a great handle, but I find the blade pretty annoying. I've been looking for something to replace it with for the longest time. Even something as modestly priced as the Dojo, once you add $50-100 for a custom handle, well...

The other is the Shun Classic.

I don't really use either much any more as both have been relegated to use by the wife....I use one I made. :)

I'm actually working on making 4 little parers right now.....3 in AEB-L and one in Devin's carbon damascus.

I have a few of those Victorinox paring knives around. My wife loves them and they seem to hold a pretty good edge. She even puts them in the dishwasher! :shock: But that's why she's not allowed to touch my knives.

Most places list it as an Aogami core, but they don't say if it's Blue #1, Blue #2, or Aogami Super.
