Mark - I'm loving every product I've purchased from your fine company - many thanks!

Getting ready to purchase a 210mm gyuto and have narrowed the prospects to four:

1) Tsutumo Kajihara 210mm gyuto

2) Kanehiro 210mm wa-gyuto

3) Sakai Takayuki Ginsan 210mm wa-gyuto

4) Takeda 210mm gyuto

Any that I should obviously run toward or from? Most important is edge-taking and -holding. Also, I have large hands so clearance is somewhat important. $$ not an object, as I suspect the adage that "you get what you pay for" holds as true for fine knives as it does for optics and firearms.

Thanks and no hurry or need for lots of detail. If you prefer I post this on the forum, please so advise.

Of that list, the Kanehiro or Takeda would be my choice, but you should also look at the Tanaka 210mm Sekiso and the Richmond AS Laser when it comes back in stock. The Tanaka really holds an edge well for Blue #2 and the Laser is awesome as well.

If those aren't correct, the following could be worthless.

Of those four......Takeda.

I wouldn't shy away from any, though. 1, 2 & 4 are all incredible knives. 3 I don't recall ever seeing in person. But, it looks like a clone of Kikuichi Ginsanko I loved dearly. If it is, it's a fabulous knife as well.

Takeda, for me at least, holds something magical. It might not necessarily perform better....but it definitely won't perform worse and I really like his knives.

Adam - thanks for the advice. The two links you posted are the knives I was considering. And I have been leaning all along to the Takeda. Part of the joy of hand production is the irregularity of the end product.
