LOL! I tried a video with my Tanaka Sekiso 240mm, but with the heavy giraffe bone handle on it and the fact that it's stupidly sharp, it kept sticking into the board. Same issue with my Tojiro ITK Kiritsuke that I went to just about a zero edge with on J Nats.

Artifex 240mm gyuto converted to a wa tang/handle. Potatoes once again were the food I had on hand to cut up!

See the bandaid??? Mom walked by, saw the camera and HAD to say "Don't cut yourself" as she walked by. So of course, I took a nice slice out of my finger near the knuckle during the first video. I didn't post that one :)

I still haven't put my 240 Tanaka to the stones yet. The Nakiri and petty I sharpened up and they have been good since then!
