I have numerous 210 and 240 gyutos of all qualities, I recently borrowed a friends 270 Takeda and was blown away. It's the first time I used a 270 and now I realize I must buy one immediately! I'm right handed, gun to head I would choose carbon but appreciate stainless just as much. Price isn't too much of an issue. Would prefer to spend under $400. u guys are great here on the forum and I look forward to some quality recommendations.

If you love the Takeda so much, why not buy it?

Cuz lemme tell you... you're not gonna find anything even remotely near Takeda's geometry...

In semi-stainless Wa you have the Konosuke HD Gyuto, Konosuke HD Funayuki, the Richmond Ultimatum HD by Konosuke... these knives are nothing like a tall ass Takeda.

The stainless Suisin INOX Honyaki is, depending on the day, my favorite knife, but $440 & again... nothing like a Takeda.

When I say "blown away" I meant more with the length as it was the first time I'd used a Gyuto larger than a 240.

A 270mm Takeda gyuto isn't really like anything else on the market. It's a huge, wide blade.

I'm assuming you know that, and you've decided to hunt for other knives in the 270mm length...so:

The original stainless laser.....incredible F&F....beautiful handle.....extremely light.

Some options anyway....there are a bunch of great 270mm gyutos and without further refinement, a guy could keep going.

I have not used a 270 Takeda before, but did work on a 240 a few months ago. I've held the yanagi, the banno bunka, and a 240 gyuto. All were equally of tight fit and finish, blade construction... extremely consistent knives in my opinion, especially for being a kurouchi finish knife. I'd love to check out that 270 if you wanna send one my way, certainly am not going to say no! :D

I got to do a few saya's for Takeda 270's, and also a 240mm sasanoha; I really liked the sasanoha one!

I just purchased a 270mm Gyuto and so far I love it, granted it has a western handle and a collar or partial bolster but I love it either way. I was intimidated it would be a little too long but this is not the case. It sounds like it is not up your alley but it is a kikuichi tkc performance. I will tell you that the takeda looks amazing but it is a bit out of my price range at the moment.

Thank you For the suggestions Adam, I did have my eye on a few of those off the site. Particularly the Masakage Yuki and the Suisin Inox Honyaki. As different as the Takeda is, I still haven't ruled that out either. Knowing myself i wouldnt be surprised if sometime soon im in possession of the Takeda and the Suisin :roll: Decisions, decisions.

Everyone should at one time or another own a Suisin Inox Honyaki, and a Takeda. Don't matter the style....gyuto, suji, nakiri, etc.....just gotta own one.....or 6 or 7 of each as some of us have done. :o
