I assumed that the Shinogi Line was a term used only for single bevel knives, but all knives have a Shinogi Line or Lines.

Just something I learned recently, If I am incorrect, I'd appreciate someone saying:

"you are dead wrong" :)

There are a *few* double-bevel gyutos (Heiji comes to mind) that have a relatively sharp demarcation between the flat and the (large) bevel that you could call a shinogi line. It's hard to imagine where this line would be, however, in a flat-ground knife like a Devin Thomas ITK gyuto or a convexed Shigefusa.

Peter, you're 100% correct, Shinogi lines exist on double bevel blades as well. Some of the more famous examples are the Japanese Katana, wakizashi, or tanto - the sword polishers will put significant amount of skill/effort in dealing with the Shinogi line on both sides of the blade.
