I'm going to try and make a version of my Artifex with my Japanese factory. We are not sure which steel to use and I have to get this right since they want big quantities in order to do these.

So, please vote. White #1, White #2 and Blue #2. All of these will be clad in stainless steel and price point will be in the $99 range with a simple western handle attached.

I do not want to do these in aogami super or hap40 since our factory is working on the kohetsu line with these with wa handles. we could revisit this at a later time if these are hot sellers.

I would like to see 120 to 135 petty shape liked laser Aogami with the nice height. in the artifex line ;) I voted for white 2 but blue 2 would be sweet

While I think that "Number One" may market better than "Number Two" -- I'm going with my perception (and not from personal experience) that #2 sharpens a little easier than #1 with nearly as good an edge. I'm also going with my equally second- and third-hand perception that white is a little more robust to abuse than is blue.

Edit -- To be clear, any of them at the price point you are shooting for, as long as it didn't have a "marginal" handle, would be very attractive as first knives for friends, or ones I wouldn't worry too much about leaving out when others are using whatever they find in our home kitchen.

Looks like Blue #2 is the winner. I have some more build questions I need to poll but the steel is now decided. Thanks! These are gonna be bad ass knives for under $100.

If I may be so bold as to request a blade height about 46mm for a 210 Gyuto and about 48-49mm for a 240 Gyuto. Hey, I gotta ask :-).

Thin behind the edge, yes. Laser? Not so much. 3mm over the heel for a gyuto is good. Distal taper? Absolutely! A distal taper like the Zwilling-Kramer would be really sweet.
