From looking over what you offer, the laser gyuto aogami 210mm is what I'm after in a nutshell, I've been goin back and forth between Damascus, or carbon, steel types and so on. I would prefer an ebony handle an ferrule However. I'm lookin for a knife that will be my everyday workhorse, elegant and functional, and still be just that when I give it to my son when I'm to old
For the kitchen. I've ordered almost my entire kit from your site an know your quality And commitment to your wares. These are broad strokes of what I'm after, let me know what you think, also I would not be opposed to the 240 mm, but wouldn't feel comfortable with a knife any larger than that. Thanks

My aogami laser has been a big hit and I think you would enjoy using that knife. There are others. If you like a tall knife I really like Takeda's gyuto. It's fantastic.

As for customs we can do a whole range of custom handles. Just email me a picture of something you like on our site we charge $150 for a two piece handle with nice stabilized burl woods and more for more complicated stuff.

Can't hardly recommend against the AS Laser, great knife.

The handle is, I believe, rosewood and ebony ferrule. A handle that should stand the test of time a lot more so than a ho wood handle.

As Mark noted, the Takeda is also very nice.

Depending on your budget, there could be other knives. I'm not sure what draws you to the AS Laser though, so suggesting other knives would be totally at random. :)

I think the AS Lasers are Wenge Ferrules and PurpleHeart or Bubinga handles on the ones I have seen before they sold out.

I got the AS Laser Gyuto w/o the factory handle, but I did get to check out a few Laser AS Nakiri's and they had the Wenge ferrule and PurpleHeart handles. They were nice, but a bit small for my paws. I even find the Addict 2 handle a bit small as well.
