Hi. Was looking at the Takeda knives, among others, which is made of AS. One of the customer comments was:

"Not for chopping or rocking the blade to chop vegetables - the edge is somewhat brittle."
"Perfect for slicing and dicing."


Should this knife not be used for rocking or chopping?

what they meant was not to whack on stuff. you can chop, just not chopping in a western sense. "light" chopping, just using mostly the weight of the knife and maybe the weight of your hand to do the cutting.

Yes, the edge on a Takeda is more brittle than a soft German stainless.

Yes, you can still use it to chop, or rock, or......you can use it like any other knife except in so much as you can't be rough with it.

Just received my Sasanoha last week.

Even with the blade being super thin to go with a steep edge (<10°), it rocks and chops like a champ. It's still able push cut paper after a 70hr work week.

They are more like a normal 240mm than a tall Takeda one. I did a saya for one and really like the profile and lower height compared to the normally tall Takedas!

If that's pet sarcasm, I reply :P

If you're actually serious, I reply that I'm curious as to how much they vary. I really want an excuse to buy a Takeda, but you know how little I resonate with a 240 Gyuto that hits the tape at around 60mm tall & this Sasanoha, at 46mm, is still too short. If they vary up into the high 40's, I would consider asking Mark to be on the lookout for the tallest of the bunch.

My 240mm Sasanoha came out of the box measuring 46mm on the nose. It was a lot taller than I was expecting and I've since taken it down quite a bit.

It's definitely taller than the picture would suggest. Much more in line with a standard gyuto than a "tall suji".
