I am interested for a Kikuichi elite carbon sujihiki 270 mm.
Now I want to ask some questions: Is the knife cladded- sandwiched to a soft metal that does not react? 2. Is the logo embossed-anaglyph as shown in the video at second 19? or is it by ink? 3. Is any cheap saya available?
On the Kikuichi Elite Carbon Gyuto I had, the logo was stamped into the blade and the bottom of the stamp was black. Not sure if they are still done that way, but I believe that they are! It is a solid mono steel. If you are looking for a carbon core, stainless clad suji, there are some out there, but they are much more expensive! Kanehiro and Masakage are the first two that come to mind.

Great knife....I still love my suji.
As others have said....mono steel and mine is stamped kanji.
