I am currently working on a M390 240mm gyuto myself, as well as a nakiri, honesuki, and a small paring knife. My handles won't be near as nice as yours, that's just beautiful man.
I also had to start with .177 thick stock, that's all I could get Bohler to send me at the time. I will probably post some pics when I get some more grinding done, this steel is pretty wicked to work with.
I would love to see you post some more videos of this knife in action.

We are lucky - we have a BÖHLER agency about 3km from me who supplies cut sizes on request - even K390.
Ok, I must admit that the handle might be a dash extravagant, but what the hell - for a knife of a lifetime......my unit is still in the prototype stage and is still going to be altered/changed until I am 100% happy with all the facets required of a practical gyuto - that does not mean it will be a laser, but as close as can be to ensure a good convex grind and be able to cope with all & any gyuto related kitchen duties.
The profile/geometry is based on a combination from my "famous non stiction Konosuke ZDP-189" and the new shape Konosuke Funyaki - both of which was analyzed, measured and designed via autocad with a slight twist introduced by me.
Once I have tested some more and the knife altered accordingly, I will have the final product - then clone & document it for re-production.
I already have another unit in research/production with a different steel (much tougher) and similar edge holding.... cannot wait........
Here is a hint - look at the last part of the video where the knife is smacked onto the angle iron bar......
