Welcome folks,

I am new to the forum and just starting to get into sharpening. That being said I have jumped in head first - I heard somewhere you shouldn't do that until you know what your jumping into.

I just got the Shapton 1k/4k and am looking to get the Latte 400 when it's back - beginning to get my old, dull Henkles back in shape.

I also picked up the Richmond AS Laser 240 Gyuto (was lucky to order that BEFORE Mr. Knife Fanatic's video was posted.) Loving that knife and now I have the 'bug' big time.

I am looking forward to ongoing dialogue as I continue this journey - first as a learner, but hopefully adding my experiences as I learn. I really enjoy the forum and am looking forward to learning from ll of you.

Welcome to the jungle David! Nothing wrong with jumping in head first, just makes you sink or swim. Just know that now that your in the water it get's pretty deep!
You have some good stones and a great knife, enjoy.

Yes sir, welcome to the forum! You sure did get a heck of a good combo there... Shaptons and a Richmond AS Laser would make anyone smile! :)

Hello I am Alex from Hong Kong , educated in Canada but brought up using the the Chinese cleaver~ the all around knife

So the knifes that interest me in now is the Nakiri :p

I see you are imagining you will resonate with a Nakiri considering your comfort w/a chinese cleaver. Something else you might consider looking at are the Gyutos by Shosui Takeda. I liken them to Nakiris w/pointed tips; maybe a way to expand your horizons. ;)

I was led to this forum by Fate, and thrilled to find it. I love knives and steels - and get a real thrill out of putting them to good use. I actually enjoy sharpening knives, and I have a wife who doesn't understand why I have to continually sharpen my kitchen knives. I say "my" kitchen knives because the only one she insists I keep is the serrated Wusthoff utility knife. Other than that, she would rather use scissors. It's good to find a site devoted to chef's knives - not that I don't also love tactical knives to the point of having had a Mad Dog or three and was pretty god with a scalpel, I just have more of a need for chef's knives these days.
